A sip of Clos Cibonne ros is a step back in time 120 years. This vineyard is one of 18 Crus Classs of Ctes de Provence, from a family that played a role in creating the Ctes de Provence AOC in 1973. On windy bluffs overlooking Toulon, near Bandol, fifth-generation winemaker Olivier Deforges and only one other employee craft this wine from 90% Tibouren and 10% Grenache. They raise the wine in 120+ year old foudres under flor, as is done in the Jura and Jerez, imparting savory, exotic aromas and transmitting the sea breeze that the thin-skinned Tibouren requires to thrive.
