Nose: “That Spanish sun dried fruits are there in abundance smothering the warm Spanish oak it has been wedded to for all these years.”
Palate: “Oh boy! The most luxurious and sumptuous of Sherry bombs. This is so moreish you will need to hide the bottle. Sweet stewed dried fruit and nut, chocolate and ginger and cinnamon dance across the tastebuds. A touch of old leather and alcohol soaked prunes.”
Finish: “This is going to stay with you for an age! Delightful, playful and warming its way to the tip of your toes.”
Distillery Information
“Mashing is speedy, while fermentation in a mix of steel and wood is on the shorter side. A ratio of two wood to one steel balances any differences in character, while the length of the fermentation introduces a cereal note beneath the fruit. Distillation, however, is long in very tall stills with boil bulbs which help to maximise reflux and allow the full range of Glenrothes complexities to be teased out.”
