Description
One of the few craft gins made in Australia, Four Pillars was founded in 2013 in the Yarra Valley close to Melbourne using a CARL copper pot still called Wilma to produce its Dry Gin. Funded through Pozible an Australian version of Kickstarter, Four Pillars is the brainchild of wine making and marketing duo Stuart Gregor and Cameron Mackenzie and brand guru Matt Jones, who want to produce the best craft spirits Australia has to offer.
The name Four Pillars was chosen as a reflection of the four pillars of the gin; the still, the water, the botanicals and their passion for craft.
Four Pillars Olive Leaf Gin is Inspired by a visit to the Cobram Estate (makers of top-notch olive oil) during the olive harvest, this expression incorporates both olive leaf and olive oil as botanicals, as well as a host of herbs like rosemary, bay leaf, coriander, and more. There’s also a helping of lemon and grapefruit in there too, but the focus here is most definitely the gin’s savoury elements.

Tasting Notes
Herbaceous with hints of bay and rosemary up front, earthy juniper, softly vegetal richness of olive, a touch of bright lemon and lavender tucked away underneath it all.
Perfect Serve
Makes a cracking Classic/Dirty Martini garnished with an olive. Premium tonic garnished with rosemary and an olive.
