Daisekkei Brewing Companys seasonal sake is always incredibly juicy. Using aromatic yeast, Daisekkei Summer Light doesnt disappoint. This sake uses Hitogokochi rice from contract farms, polished in a special way called henpei to maximize the pure starch center. By carefully controlling the water ratio during fermentation and stopping fermentation at 13% ABV, they creatie a refreshing balance between umami, bright acidity, lightness and a dry finish.
