DESCRIPTION
Akashi-Tai Junmai Tokubetsu is a traditionally crafted sake made from 100% Yamadanishiki rice, Kapans most prized sake rice, polished to around 60%, meaning 40% of each grain has been milled away to remove heavier outer layers and highlight cleaner, more refined flavours. This special junmai style showcases the natural character of the rice, offering a fuller-bodied, umami-led profile with clean structure and gentle refinement. Bottled at 15%. (Bottle size 720ml.)
TASTING NOTES
Nose: Creamy and inviting, with soft aromas of ripe pear and banana, underpinned by gentle yeastiness and faint grassy or vegetal undertones.
Palate: Smooth and rich, offering ripe banana, green apple, galia melon, and pear. The profile leans slightly sweet initially but is balanced by a delicate acidity and subtle minerality, giving a well-rounded plush mouthfeel.
Finish: Clean, softly fruity, with lingering gentle acidity and a hint of earthiness/mineral. A well-balanced finish that lingers.
