D&M NOTES (MK, FALL 2025):
TASTING: The nose opens with a complex aroma set of golden apple, citrus, clay minerality, and white cherry. The palate is just shy of moderate in weight and quite precise for a Pinot Noir cuvee with delineated flavors of citrus, golden apples, and taut minerality.
PRODUCTION: This is done by Paul Clergeot who has been working with some of his family’s plots in the Cote des Bar village of Polisot. He has been farming following biodynamic principles, and this comes from a single east facing plot of Pinot Noir on the riverside, and after harvest in late August 2022, it was fermented and aged in stainless steel. After two years on its lees it was disgorged without the addition of dosage in early 2025 with a total of 5,637 bottles produced.
