J California Cuve Brut

Vibrant, bright and approachable, our California Cuve Brut opens with fragrant aromas of citrus and orange blossom. Fruit-forward notes of crisp green apple, juicy pear, fresh-cut lemon and Kaffir lime dance across the lively palate, layered with hints of almond slivers and a subtle touch of toasted pastry. California Cuve finishes with a refreshing zest of acidity.
Grapes for the California Cuve were primarily hand-harvested into small half-ton bins and placed as whole clusters, without destemming, into our presses for a gentle, low-pressure pressing to minimize the breakdown of grape skins and seeds. Each vineyard lot was fermented and kept separate until blending. Reserve wine from previous vintages was added to round out the mouthfeel. Ultimately, our cuve was assembled and cold-stabilized to remove excess tartrates and then bottled in March of 2017.
