100% Weissburgunder (Pinot Blanc) from 65 year-old vines grown in the Muschelkalk (shell-limestone) soils of their estate in Baden. The grapes cold-soak for ~ 1-week prior to fermentation. Thereafter, the grapes are slowly pressed into small neutral barrel (barrique) where the juice spontaneously ferments and the wine ages for at least a year sur lie. The wine is then racked of its lees into stainless steel tank where it rests for a further year. Bottled unfined, unifltered, minimal added SO2 at bottling. Notes of pears, lemon zest, almonds, crushed gravel.
