Description
Plume is the brainchild of Gevrey-Chambertin-born Aymerick Geantet, an exciting young winemaker who spent many years at the renowned Domaine Prieur Roch. Upon his departure from theCtes de Nuits, he embarked on a search for vineyards where he could push the boundaries of Chardonnay and Pinot Noir, while also expanding his horizons. He landed in LeSud Revermont, Rotalier in the Jura, home to high-quality winemaker Domaine Labet. These distinct vineyards offer a surface layer of clay, on outcrops of calcareous slabs called Bajocian, creating a perfect blank slate for Aymerick to work.
Building off his long-standing relationship with Chardonnay and Pinot Noir, Aymerick reoriented his focus in purity and precision to the production of Savagnin, Trousseau, and Poulsard. Influenced by his former training, he practices low-intervention philosophies from the vineyard to the cellar with minimal sulfur, and no fining or filtering. The final product is pure, precise, and gastronomic. In 2021, to combat a very tough Jura vintage, he only produced two blended cuves: one white and one red. The white is a blend of 60% Savagnin / 40% Chardonnay, and the red is a blend of 40% Trousseau / 25% Poulsard / 35% Pinot Noir.
