Description
A brewery with a lot of influence from the wine industry, Senkin Shuzo has a specific modern twist on old school brewing practices. All sake in their “Classic” line are brewed with the traditional methods, but theycarrywine-like characteristics like high acidity and fruity aroma. Using the same concept as Domaine in wine, Senkin’s rice is grown with the same water used to brew sake — the brewers (11th generationbrothersKazuki Usui (Brewer) and Masato Usui (Toji) value terroir as natural winemakers do.
