From grain to glass, this exceptional bourbon is crafted entirely on Starlights 700+ acre family farm, using estate-grown grains and honey. Distilled with care using the sweet mash process and double pot distilled on a Vendome copper still, it showcases a meticulous blend of 57-year-old bourbons from Starlight’s signature mash bills:
60% Corn, 20% Rye, 20% Malted Barley
51% Corn, 9% Wheat, 20% Rye, 20% Malted Barley
The spirit then undergoes a rare secondary aging of 412 months in fire-charred and toasted oak barrels that once held barrel-aged, estate-pollinated honeyimparting deep layers of sweetness, spice, and oak.
On the nose, delicate notes of fresh orchard fruits and sweet honey rise above the layers of vanilla and toasted oak. The palate is elevated by flavors of golden apple and warm baking spice. The finish is long and harmonious, leaving traces of honeyed spice and barrel-aged warmth.
