| What Lost Republic Ryeis known for being a bright and fruity rye. Because its blended and aged in the cool wine country of Healdsburg, it trades the heavy charcoal burn of some Kentucky ryes for a profile that feels more like a spiced orchard fruit. It is very fragrant. Youll get a big hit ofgrapefruit zest and raspberries, followed by savory notes oftobacco leaf and ginger. It has a lovely sweet-to-spicy transition. It starts withcherry and toffeesweetness, but then the 95% rye mash bill kicks in with a wave ofclove and black pepper. Because they use barrels that were air-dried rather than kiln-dried, the wood tannins are softer. This results in acreamy vanillaflavor that rounds out the spicy edges. It ends with a long, soft snap ofred pepper and cinnamon, leaving a lingering taste of toasted oak and fruit. |
