Still Austin Distillery Reserve Series Cognac Cask Strength is a 108 Proof (54% ABV) Distillery Exclusive bourbon produced at the Still Austin Whiskey Co. distillery. Released as a limited seasonal offering in 2022, this expression features a high-rye mash bill of 70% white corn, 25% rye, and 5% malted barley. The spirit was initially matured in new charred American oak before undergoing a secondary finishing period in French Cognac casks.
This double maturation in the intense Texas climate has integrated the bold bourbon spice with delicate notes of honey, pear, and fig. It is bottled at a natural cask strength and remains non-chill filtered to preserve the complex layers of whipped cream, apricot jam, and toasted vanilla developed during the finishing process.
