Made primarily from Pinot Meunier, with touches of Chardonnay and Pinot Noir, this NV cuve is fermented with native yeasts and aged on the lees for complexity. The lack of dosage means theres no sugar to soften the edgeswhat you taste is all tension, minerality, and dry precision. Expect green apple, lemon zest, crushed chalk, and a whisper of toasted almond, all wrapped in a fine mousse and a long, saline finish.
