TASTING NOTES:Made from 100% Botrytis affected grapes and aged in barrel, this is a complex wine revealing a seductive nose of mandarin rind, crme brulee and apricot. In the mouth lush notes of walnut, toasted almond and honey combine effortlessly with a bright, zesty acidity to give excellent structure and length.
PRODUCER: For many years, Juan Cneo Solari, the son of an Italian immigrant, dreamed of having his own vineyards in order to produce exceptional wines. At a time when the Chilean wine industry was pursuing quantity over quality, Mr. Cneo sought to produce premium wines. In 1993, he finally founded his winery in the Casablanca Valley and named it Casas del Bosque. He was one of the first to plant in the area. Since then, the valley has seen a boom in popularity, and Casas del Bosque remains one of the few family-owned wineries. The great forests of ancient pine, olive groves and the small, abandoned white adobe houses since gone were the key factors in determining the name of the vineyard and the family home, resulting in the name Casas del Bosque, or Houses of the Forest.
WINEMAKING:On arrival at the winery all grapes were first subjected to a whole bunch followed by an individual berry selection. The grapes were then loaded by hand into a vertical basket press where they were gently squeezed to a maximum pressure of 6 bar. The resulting juice was fed by gravity to fifth use French oak barrels where it was slowly fermented at wintery temperatures for 6 weeks with selected yeasts until fermentation stops. Following fermentation the wine was racked and returned to the same barrels where it was aged for a further ten months. After a total of 12 months in barrel the wine was racked to tank, filtered and bottled. Only 10.700 bottles of 375ml were produced.
