Cashmere: a versatile dual-purpose hop developed by Washington State University and released in 2013. A cross between Cascade and Northern Brewer, Cashmere offers a complex and intensely fruity aroma profile, featuring strong overtones of lemon, lime, peach, and melon. Secondary notes of coconut, lemongrass, candy, and herbs emerge in whirlpool or dry hop additions. Cashmere shines when used for aroma and flavor in hop-forward styles, and its respectable alpha content combined with low cohumulone allows it to contribute smooth bitterness if used early in the boil.
