“Dailuaine Distillery, founded by farmer William Mackenzie in Speyside in 1852, became famous for being the first to install Charles Doig’s iconic pagoda roof (1889) to create lighter, less peaty whisky for blends, but a 1917 fire led to a major rebuild by Diageo, its current owner, focusing on rich, meaty spirits, mostly for Johnnie Walker, making rare official single malts highly sought after.”
