IMPORTER NOTES:
100% Gamay from 50+ year old vines in Trousselles home village of Orches, in the Hautes Ctes de Beaune. De-stemmed fruit is gently macerated and fermented for 15 days before spending a year aging in neutral French oak barrels.
SOILS: Chalky limestone and clay
FARMING: Dry farmed with organic/sustainable practices
FERMENTATION: Destemmed, macerated for 15 days on skins
AGING: 12 months in neutral barrels
YEASTS: Indigenous
