Description

Ruby Abyss No.285 is one of Lark Distillery’s Signature collection.

Aged in 100% first-fill vintage Port and Sherry casks, courtesy of Seppeltsfield Wines, featuring a century-old Australian Port reserve.

Nose – Steeped pears in aged dessert wine, amber raisins, caramelised Demerara sugar, and a whisper of salted macadamia.

Palate – Lush plum preserve folds through chocolate sauce, with buttery croissant layers and a drift of earthy peat.

Finish – Deep fortified oak warmth lingers through spiced golden treacle on the finish, as candied quince and umami leave a velvety depth.
