80% Pinot Meunier and 20% Chardonnay. More of a wine than a Champagne – there’s even less pressure – 5 bar using natural yeast. Big and briochy – Max is not looking for Meunier’s exotic fruit flavours but something more complex and pure – a sort of autumnal palette of dried fruit and nuts, polished and patinated. The exceptional balance draws you back for more.
