Description
Sourced from 55-year-old vines from a single parcel in the valley below the village of Mersault, Sous la Velle (French for “under the valley”) is a classic and nuanced presentation of 100% biodynamic chardonnay from the Cte de Beaune. Vigneron Pierre-Henri Rougeot harvests the exquisite fruit by hand, presses it in whole, untrimmed bunches and lets it cold settle for two days before alcoholic fermentation with native yeasts and malolactic fermentation in barrels. A long maturation in oak barrels for 20 months without bttonage gives this stunner just a hint of oak to elevate its rich and layered complexity. Pierre-Henri only makes this amazing white Burgundy when the wine is so pure that it can stand without the addition of sulfur and leaves it unfined and unfiltered to retain its superior texture and depth.
