Old Charter Oak Chinkapin Oak 93 Proof (46.5% ABV) is a highly allocated, Kentucky straight bourbon whiskey produced as a limited release by the Buffalo Trace Distillery. This 2020 expression utilizes the distillery’s celebrated Mash Bill #1 (low-rye) and represents an exploration into the influence of Chinkapin oak, a species native to the American Midwest. The liquid matured for nine years in barrels constructed from staves that were air-dried for a remarkable 24 months, significantly longer than the industry standard.
These barrels received a specialized Level 3 char (35 seconds) to specifically caramelize the wood sugars unique to this species. This evolutionary process yields a rich and complex profile of cherries, spearmint, and honey, balanced by a deep undercurrent of fresh herbs and baking spices with a long, dark chocolate finish.
