Fermentation is conducted in stainless steel or small opentop tanks, depending on the varietal, with pumpovers or punchdowns managed to achieve structure without harshness. Aging takes place in a mix of French and American oak barrels, where time in wood refines texture and brings added complexity without masking the grapes natural profile.
