DESCRIPTION
Made from 100% Chenin Blanc sourced from a single old-vine vineyard on the Paardeberg in Swartland, rooted in decomposed Malmesbury shale soils. The bush vines are 55 years old, naturally low-yielding at 6 t/ha, producing well-balanced fruit in a warm, dry climate tempered by altitude and coastal influences. Grapes were hand-harvested in the early morning of 6 February 2023 at 21 Balling, chilled overnight, hand-sorted and gently whole-bunch pressed. The juice was settled overnight at 8C before being racked to old French oak barrels, where spontaneous fermentation occurred. The wine remained on its lees for nine months with stirring prior to bottling, followed by a further 24 months of bottle ageing before release. Residual Sugar 1.8 g/L. Bottled at 13.5% (Bottle size 750ml).
TASTING NOTES
Nose: Expressive and layered, showing orange blossom, tangerine and subtle caramel, with underlying stone fruit and citrus zest notes.
Palate: Textural and poised, with flavours of white peach and orange rind carried by a mineral, gently savoury core and a rounded, velvet-like mouthfeel.
Finish: Long and clean, with bright acidity providing lift and precision, and a chalky, dry line that extends the finish with clarity and balance.
