My choice for Sake was inspired by a lunch I had at my local Thai restaurant. I had a fresh seafood ceviche type appetizer and a bowl of savory beef stew with rice noodles. I looked at the drink menu for possible pairing choices and found a modest list of Sakes. Then, I thought about the Sakes we had in the company that would fit both dishes. I remembered this particular one: SOTO Premium Junmai Sake. The first time I had it was years ago at a trade tasting. There was a Thai restauranteur of all people alongside me, and he commented that this Sake was versatile enough to pair well with many of our traditional dishes. I fully agree.

On the palate, this Sake has a nice apple top layer with a nice umami undertone, crisp acidity in flavor but not feel, and delicate mineral finish. It’s an easy drinking Sake where flavors will be enhanced depending what you pair it with. This is great for those customizeable poke bowls, cold appetizers, yakitori, or any of your favorite Japanese bar menu items. Kanpai!
