This Junmai Ginjo is brewed from the new rice variety Hyogo Nishiki. It features an elegant profile with sweetness and umami from the rice. Hyogo Nishiki is envisaged as the next-generation sake rice, born from a cross of Yamada Nishiki and Aikai 134. It expresses the full advantage of the rice of Hyogo-kishu with an impression of an outstanding crisp taste with umami.
