Shinryu Nishiki is born from e unique concept of crossbreeding two legendary sake rice varieties – the savoury-tasting ‘Shinriki’ and the sweet and mellow ‘Yamada Nishiki’. This exquisite rice is the result of a passionate brewer’s vision to create a one-of-a-kind sake rice that combines the best qualities of both rice strains.

The name “Shinryu Nishiki” pays homage to the revived ‘Shinriki’ rice, after a century-long absence, and the king of sake rice – ‘Yamada Nishiki’. Cultivated in the top-tier Yamada Nishiki fields of Hyogo Prefecture’s Specially-Designated A District, this rice has undergone extensive research and effort to produce a truly exceptional sake.

About Yamada Nishiki

Hyogo Prefecture’s Yamada-Nishiki, originating in 1936, has earned nationwide recognition among sake brewers and master brewers for its exceptional qualities as sake rice. Cultivated throughout the country, this particular variety from the Special A District in Hyogo stands out thanks to its ideal growing conditions from soil and topography to climate and farming techniques making it the paramount choice for crafting the finest sake.

About Shinriki

In the 1910s, Shinriki accounted for over 20% of rice planted in Japan, and with its large grains, it was highly valued as sake rice. It was discovered in 1877 by Maruo Jujiro in Nakajima, Mitsu-cho, Tatsuno City, Hyogo Prefecture.
Shinriki had disappeared over the years, but after seven years of work, a phantom rice that existed in Tatsuriki’s local area was revived in 1992, for the first time in about 100 years.
